Ingredients:

3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
1/3 cup vegetable oil or melted lard
1 cup warm water

Directions:

In a large mixing bowl, whisk together the flour, salt, and baking powder until combined.
Add the vegetable oil or melted lard and mix until the flour resembles coarse crumbs.
Gradually add the warm water, mixing with a spoon until the dough starts to come together.
Turn the dough out onto a lightly floured surface and knead for about 2-3 minutes until smooth and elastic. Cover the dough with a clean kitchen towel and let it rest for 15 minutes.
Divide the dough into 12 equal pieces and roll each piece into a ball.
On a lightly floured surface, roll out each ball into a thin circle, about 6-8 inches in diameter.
Heat a dry skillet or griddle over medium-high heat. Cook each tortilla for about 30-45 seconds on each side, or until light golden spots appear.
Keep the cooked tortillas warm in a clean kitchen towel while you finish cooking the rest.
