Creamy Mozzarella Chicken Linguine with Cajun Garlic Parmesan Sauce
Ingredients:
1 pound linguine pasta
1.5 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
2 tablespoons olive oil
2 cloves garlic, minced
1 tablespoon Cajun seasoning
1 teaspoon paprika
1/2 teaspoon black pepper
1/2 cup heavy cream
4 ounces cream cheese, softened
4 ounces Velveeta cheese, cubed
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/4 cup milk
1/4 cup butter
Italian seasoning blend for garnish
Directions:
1. Cook the linguine according to package directions until al dente. Drain and set aside.
2. In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces and cook until golden brown and cooked through, about 6-8 minutes. Season with Cajun seasoning, paprika, and black pepper. Remove chicken from skillet and set aside.
3. In the same skillet, melt butter and sauté minced garlic until fragrant, about 1 minute.
4. Reduce heat to low. Add heavy cream, cream cheese, and Velveeta cheese to the skillet. Stir until the cheeses are melted and smooth.
5. Add the cooked linguine to the skillet with the cheese sauce. Toss to coat the pasta evenly.
6. Stir in mozzarella cheese and Parmesan cheese. Continue stirring until the cheeses are melted and the sauce is creamy and smooth. Add milk to adjust the consistency of the sauce, if needed.
7. Add the cooked chicken back to the skillet with the pasta and sauce. Toss to combine.
8. Serve immediately, garnished with Italian seasoning blend.
