Three-layer Vanilla Cake with Frosting

Ingredients:

2 cups granulated sugar

4 large eggs

1 tablespoon vanilla extract

1 cup whole milk

For the frosting:

1 cup unsalted butter, softened

4 cups powdered sugar

2 teaspoons vanilla extract

2-3 tablespoons heavy cream or milk (adjust for consistency)

Instructions:

For the cake:

Preheat the oven to 350°F (175°C). Grease and flour three 8-inch round cake pans or line with parchment paper.

In a medium bowl, whisk together flour, baking powder, and salt. Set aside.

In a large bowl, cream the butter and sugar together until light and fluffy using an electric mixer (about 3-5 minutes).

Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

Alternate adding dry ingredients and milk, starting and ending with the dry ingredients (add in 3 parts). Mix until just combined.

Divide the batter evenly between the prepared cake pans.

Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

Let the cakes cool in the pans for about 10 minutes, then transfer to wire racks to cool completely.

For the frosting:

Beat the softened butter in a large bowl until creamy.

Add vanilla extract and 2 tablespoons of heavy cream or milk. Beat on high for about 3-5 minutes until light and fluffy. Adjust with more cream if necessary to reach your desired frosting consistency.

Assembling the cake:

Once the cake layers have cooled completely, level the cakes if necessary.

Place the first layer on a serving plate. Spread a layer of frosting on top.

Add the second layer, spread more frosting, and repeat with the third layer.

Frost the top and sides of the cake evenly.

Decorate as desired (sprinkles, fresh fruit, etc.).
