Peach Butter Swim Biscuits
Ingredients:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 tablespoon granulated sugar
- 1 teaspoon salt
- 1 1/2 cups buttermilk
- 1/2 cup unsalted butter, melted
- 1 1/2 cups canned or fresh diced peaches (drained if canned)
- 1/4 cup peach juice or syrup (from canned peaches or fresh puree)
Glaze:
- 1 cup powdered sugar
- 1–2 tablespoons milk
- 1/4 teaspoon vanilla extract
Directions:
1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
2. In a large bowl, whisk together the flour, baking powder, sugar, and salt.
3. In a separate bowl, combine buttermilk and melted butter.
4. Pour the wet ingredients into the dry ingredients and stir until just combined.
5. Gently fold in the diced peaches and peach juice or syrup, being careful not to overmix.
6. Turn the dough out onto a lightly floured surface and gently pat into a 1-inch thick rectangle.
7. Use a biscuit cutter to cut out biscuits and place them on the prepared baking sheet.
8. Bake for 15-18 minutes or until golden brown on top.
9. While the biscuits are baking, prepare the glaze by whisking powdered sugar, milk, and vanilla extract until smooth.
10. Remove the biscuits from the oven and let cool for 5 minutes before drizzling the glaze over the warm biscuits.
