π Ingredients
- 3 medium potatoes, peeled and grated (about 450g / 1 lb)
- 1 cup corn kernels (fresh, frozen, or canned)
- 100g (1 cup) shredded cheddar cheese
- 1 small onion, finely chopped
- 2 large eggs
- 1 tablespoon all-purpose flour
- Salt and black pepper to taste
- Vegetable oil for frying
π Instructions
1. Place the grated potatoes in a clean towel and squeeze out as much moisture as possible. This helps achieve maximum crispiness.
2. In a large mixing bowl, combine potatoes, corn, cheddar cheese, chopped onion, eggs, flour, salt, and pepper. Mix until well combined.
3. Heat a generous amount of vegetable oil in a skillet over medium heat.
4. Scoop about 2 tablespoons of the mixture per fritter and gently flatten into patties.
