Ingredients
4 medium apples (such as Granny Smith, Honeycrisp, or Golden Delicious)
Vegetable or coconut oil, for frying (about 2β3 cups, enough for 1 inch depth in skillet)
For the Cinnamon-Sugar Coating:

1 tsp ground cinnamon
For the Batter:
1 large egg
ΒΎ cup whole or 2% milk
1 tsp pure vanilla extract (optional but recommended)
1 cup + 2 tbsp all-purpose flour
2 tbsp granulated sugar
1Β½ tsp baking powder
Β½ tsp fine sea salt
Instructions
Prep the Apples
Core apples and slice crosswise into ΒΌ-inch thick rings. Use a small round cookie cutter, paring knife, or apple corer to remove the center seeds, leaving a ring shape. Set aside.
Heat the Oil
Pour oil into a large cast-iron skillet or heavy-bottomed saucepan to a depth of 1 inch. Heat over medium-high heat until it reaches 365Β°F (185Β°C). Use a digital or candy thermometer for accuracy.
Make the Cinnamon Sugar
In a shallow bowl, combine β
cup sugar and 1 tsp cinnamon. Set near your stovetop for easy coating after frying.
Prepare the Batter
In a medium bowl, lightly whisk the egg. Add milk and vanilla (if using) and whisk to combine.
Sprinkle flour, 2 tbsp sugar, baking powder, and salt directly over the wet ingredients. Whisk just until smoothβsmall lumps are fine. Avoid overmixing.
Fry the Rings
Working in batches of 3β4 rings:
Dip each apple ring into the batter using tongs, letting excess drip off.
Gently lower into hot oil. Fry for 1β2 minutes per side, or until golden brown and puffed.
Transfer to a paper towelβlined plate to drain for about 1 minute.
Coat & Serve
While still warm, toss each ring in the cinnamon-sugar mixture until evenly coated. Serve immediately for the best texture and flavor.
