Ingredients:
- 2 cups crushed graham crackers
- 1/2 cup unsalted butter, melted
- 3 ripe bananas, mashed
- 1 tbsp lemon juice
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1/2 cup sour cream
- 1/2 cup heavy cream
Topping:
- 1 cup heavy whipping cream
- 2 tbsp powdered sugar
- 1/2 tsp vanilla extract
- Fresh banana slices (for garnish)
Instructions:
1. Preheat your oven to 325°F (160°C) and lightly grease a 9-inch springform pan.
2. In a bowl, mix together the crushed graham crackers and melted butter. Press this mixture firmly into the bottom of the pan to create the crust. Refrigerate while you prepare the filling.
3. In a small bowl, combine the mashed bananas with lemon juice to keep them from browning, and set aside.
4. In a large bowl, beat the cream cheese until smooth. Then add the sugar and vanilla extract, mixing until fully combined.
5. Add the eggs one at a time, mixing on low speed after each addition to avoid overmixing.
6. Fold in the sour cream, heavy cream, and mashed bananas until the mixture is well combined.
7. Pour the banana cheesecake mixture over the chilled crust and smooth out the top.
8. Bake for 60–70 minutes, or until the center is set but still slightly wobbly.
9. Turn off the oven, leave the door ajar, and allow the cheesecake to cool in the oven for 1 hour. Afterward, transfer it to the fridge and chill for at least 4 hours, preferably overnight.
10. For the topping, whip the heavy cream with powdered sugar and vanilla until stiff peaks form.
11. Spread or pipe the whipped cream over the chilled cheesecake, then garnish with fresh banana slices just before serving.
