Ingredients:
- 150 g unsalted butter (about 10 tbsp)
- 4 large eggs (55-60 g each), at room temperature
- 1 tsp vanilla extract
- 150 g caster sugar (superfine)
- 150 g almond meal (ground almonds)
- ΒΌ tsp salt
- 1 tsp baking powder
- 75 g unsweetened desiccated coconut (finely shredded)
- 1Β½ tsp lemon zest (from one large lemon)
- 30 g flaked almonds (optional, for garnish)
