Creamy Macaroni Veggie Salad

Ingredients:
2 cups elbow macaroni, cooked & cooled 🍝
1/2 cup diced carrots 🥕
1/4 cup shredded carrots (for garnish) 🥕
1/2 cup baby spinach or chopped greens 🥬
1/2 cup sweet corn 🌽
1/2 cup mayonnaise or Greek yogurt 🥄
Salt & pepper to taste 🧂
1/2 tsp garlic powder 🧄
Instructions:
Boil the macaroni until al dente, then rinse with cold water 🍝
Chop carrots and spinach, and optionally steam them lightly 🥕🥬
Mix all veggies and macaroni in a large bowl 🥣
Add mayo/yogurt, garlic powder, salt & pepper — stir to coat 🧄
Top with shredded carrots and chill before serving ❄️
Great as a BBQ side, picnic lunch, or light dinner!
