Ingredients:

For the Steak:

1 ribeye or strip steak (1 inch thick)

Salt & pepper to taste

1 tbsp olive oil

1 tbsp butter (for basting)

Fresh parsley (for garnish)

For Chimichurri Sauce:

1 cup parsley (finely chopped)

4 garlic cloves (minced)

2 tbsp red wine vinegar

1/2 tsp red pepper flakes

1/2 cup olive oil

Salt & pepper to taste

For Garlic Parmesan Fries:

3 large russet potatoes

2 tbsp olive oil

1 tsp garlic powder

1/4 cup grated Parmesan

Salt & chopped parsley to finish

Instructions:

1. Make the Chimichurri:
Mix all chimichurri ingredients in a bowl and let sit for 15–30 mins to marinate.

2. Prepare the Fries:
Cut potatoes into fries, soak in water for 30 mins, then drain and dry.
Toss with olive oil, garlic powder, and bake at 425°F (220°C) for 25–30 mins flipping halfway.
Sprinkle Parmesan and parsley while hot.

3. Cook the Steak:
Season steak with salt & pepper.
Heat olive oil in a hot skillet or grill. Sear steak for 3–4 mins each side.
Baste with butter in the final minute. Let rest 5 mins before slicing.

4. Serve:
Slice steak, drizzle with chimichurri, serve with golden garlic-Parmesan fries and sauces like queso, salsa, or chimichurri on the side.
