Caprese Stuffed Avocados
Ingredients:
2 ripe avocados, halved and pitted
1 cup cherry tomatoes, halved
1 cup mozzarella balls (bocconcini), halved
¼ cup fresh basil leaves, chopped
2 tablespoons balsamic glaze
1 tablespoon olive oil
Salt and black pepper to taste
Directions:
Scoop out a small portion of the avocado flesh to create a larger well, then set aside.
In a mixing bowl, combine cherry tomatoes, mozzarella, chopped basil, olive oil, salt, and pepper. Stir gently to coat.
Spoon the tomato-mozzarella mixture evenly into each avocado half.
Drizzle with balsamic glaze and top with additional fresh basil if desired.
Serve immediately as a light lunch or refreshing appetizer.
