🇮🇹 Bucatini all’Amatriciana
A bold Roman classic—pasta tossed in tomato sauce with crispy pancetta and cheese.
Ingredients:
• 12 oz bucatini
• 1/4 pound pancetta, diced
• 2 cups tomato sauce
• 1/2 onion, chopped (optional)
• 1/2 tsp chili flakes
• Pecorino Romano, olive oil, pepper
Instructions:
1. Fry pancetta in olive oil until crispy.
2. Add onion (if using) and sauté until soft.
3. Stir in chili and tomato sauce; simmer.
4. Cook bucatini, reserve some water.
5. Toss pasta in sauce, add water if needed. Top with Pecorino.
