CAJUN LEMON GARLIC CHICKEN WITH CREAMY SPINACH TORTELLINI

Ingredients:

2 boneless, skinless chicken breasts, cut into strips
12 oz spinach tortellini
2 tablespoons olive oil
2 tablespoons Cajun seasoning
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
3 cloves garlic, minced
1 tablespoon lemon juice
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Fresh parsley, chopped (for garnish)

Directions:

Cook the spinach tortellini according to the package instructions. Drain and set aside.
Heat the olive oil in a large skillet over medium-high heat. Season the chicken strips with Cajun seasoning, smoked paprika, garlic powder, salt, and pepper.
Add the chicken to the skillet and cook for 5-7 minutes, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add the minced garlic and cook for about 1 minute until fragrant.
Add the lemon juice, chicken broth, and heavy cream to the skillet, stirring to combine. Bring to a simmer and cook for 2-3 minutes.
Stir in the Parmesan cheese and continue to cook until the sauce thickens.
Add the cooked tortellini and chicken back into the skillet, tossing to coat in the creamy sauce.
Garnish with fresh parsley before serving.
