Ingredients:
2 boiled eggs, sliced π₯
Β½ avocado, sliced π₯
A handful of cherry tomatoes, halved π
ΒΌ cup sweet corn π½
A few slices of red onion π§
A spoonful of mashed avocado or guacamole π₯
Crumbled feta cheese π§
Fresh cilantro πΏ
Chili powder or paprika (optional) πΆοΈ
Olive oil, salt & pepper π«π§β«οΈ
Instructions:
Start by layering greens (like lettuce or spinach) in a bowl.
Add sliced eggs, avocado, tomatoes, red onion, corn, guacamole, and crumbled feta on top.
Sprinkle fresh cilantro and a pinch of chili powder or paprika.
Drizzle with olive oil, and season with salt and pepper.
