🍓 Strawberry Shortcake Cheesecake Rolls 🍓
Ingredients
For the sponge cake:
4 large eggs, separated
1/2 cup granulated sugar (divided into 1/4 cup for yolks and 1/4 cup for whites)
1 teaspoon vanilla extract
1/2 cup all-purpose flour
Pinch of salt
For the filling:
8 ounces cream cheese, softened
1/4 cup powdered sugar
1 cup heavy whipping cream
1 teaspoon vanilla extract
1 cup fresh strawberries, hulled and thinly sliced
For garnish:
Additional sliced strawberries
Powdered sugar (for dusting)
Instructions
Prepare the sponge cake: Preheat your oven to 375°F (190°C). Line a 10x15-inch jelly roll pan with parchment paper and lightly grease it. In a mixing bowl, beat the egg yolks with 1/4 cup of sugar and vanilla extract until pale and thick.
Whisk the whites: In a separate bowl, beat the egg whites with a pinch of salt until frothy. Gradually add the remaining 1/4 cup of sugar and continue beating until stiff peaks form. Gently fold the beaten egg whites into the yolk mixture in three parts, then sift the flour over the mixture and fold until just combined.
Bake the cake: Pour the batter into the prepared pan and spread it evenly. Bake for 10–12 minutes, or until the cake is golden brown and springs back when lightly touched. Immediately invert the cake onto a clean kitchen towel dusted with powdered sugar. Carefully peel off the parchment paper and roll the warm cake tightly with the towel. Let it cool completely.
Make the filling: In a mixing bowl, beat the cream cheese and powdered sugar until smooth. In another bowl, whip the heavy cream with vanilla extract until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.
Assemble the rolls: Unroll the cooled cake and spread the cheesecake filling evenly over it, leaving a small border around the edges. Arrange the sliced strawberries on top of the filling. Carefully roll the cake back up without the towel, pressing gently to keep it intact. Wrap the roll in plastic wrap and chill in the refrigerator for at least 2 hours.
Serve and garnish: Before serving, dust the roll with powdered sugar and decorate with additional sliced strawberries. Slice into portions and enjoy!
