Chocolate Almond Cheesecake Parfait
Ingredients:
For the Crust Layer:
10 chocolate sandwich cookies (like Oreos)
1/4 cup almonds
For the Cheesecake Layer:
1 package (8 ounces) cream cheese, softened
1 1/4 cups powdered sugar
1/4 cup dark unsweetened cocoa powder
1 teaspoon almond extract
4 ounces whipped topping, thawed (such as Cool Whip)
For the Garnish:
4 ounces whipped topping, thawed
2 tablespoons sliced almonds
Instructions:
Prepare the Crust Layer:
In a food processor, pulse the chocolate sandwich cookies and almonds together until they form a coarse crumb mixture. Set aside.
Make the Cheesecake Layer:
In a mixing bowl, beat the softened cream cheese until smooth.
Add powdered sugar, cocoa powder, and almond extract to the cream cheese. Mix until fully combined and creamy.
Gently fold in 4 ounces of thawed whipped topping until the mixture is light and fluffy.
Assemble the Parfaits:
In two serving glasses, add a layer of the chocolate almond cookie crumbs.
Spoon a generous layer of the chocolate cheesecake mixture over the crumbs.
Repeat the layers if there is room in the glass, ending with the cheesecake layer.
Add the Garnish:
Top each parfait with a dollop of the remaining whipped topping.
Sprinkle with sliced almonds for a crunchy finish.
Chill and Serve:
Refrigerate the parfaits for at least 1 hour to let the flavors meld together. Serve chilled and enjoy.
