Ingredients
For the Dough:
• 2 cups (250g) all-purpose flour
• ¾ cup (180ml) water
• 2 tbsp (30ml) olive oil
• ½ tsp (2.5g) salt
For the Topping:
• 4 large onions, thinly sliced
• 3 tbsp (45ml) olive oil
• 10 anchovy fillets
• ½ cup (75g) black olives
• 1 tsp (5g) thyme
• Salt & pepper, to taste
Instructions
1️⃣ Prepare the Dough:
In a bowl, mix flour, water, olive oil, and salt until a smooth dough forms. Knead for 5 minutes, then cover and let rest for 30 minutes.
2️⃣ Caramelize the Onions:
Heat olive oil in a skillet over low heat. Add sliced onions, thyme, salt, and pepper, and cook slowly for 30 minutes, stirring occasionally, until soft and golden brown.
3️⃣ Roll Out the Dough:
Preheat oven to 400°F (200°C). Roll out the dough into a thin rectangle or circle and place it on a lined baking sheet.
4️⃣ Assemble the Tart:
Spread the caramelized onions evenly over the dough. Arrange the anchovies in a crisscross pattern and place a black olive in each diamond-shaped section.
