🍋 LEMON TRUFFLES😋😍
✅ INGREDIENTS:
4 oz (115 g) cream cheese or coconut butter, softened
2 tablespoons butter or additional coconut butter
3 tablespoons powdered sugar or erythritol
Zest of 1 lemon
3 oz (85 g) white chocolate chips (optional)
Optional: a drop of natural food coloring or a pinch of turmeric (for a yellow hue)
🧑🍳 INSTRUCTIONS:
Bring the first two ingredients to room temperature if they aren't soft already.
In a bowl, mix the cream cheese (or coconut butter), butter, sweetener, and lemon zest until smooth.
You can use a fork or, for a creamier texture, a hand mixer.
Optional: Add food coloring or turmeric for a hint of yellow color.
If using, stir in the white chocolate chips (or save them for coating later).
Chill the mixture in the freezer for 10–15 minutes, or until firm enough to scoop.
Using a small spoon or cookie scoop, form the mixture into small balls and place them on a lined tray.
Freeze until firm (about 15–20 minutes).
Optional: Dip the truffles in melted white chocolate or coconut butter for a smooth coating. Return to the freezer until set.
