Rich & Creamy Garlic Butter Chicken Bites Rotini with Parmesan

Ingredients:

1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
1 tbsp olive oil
4 tbsp butter, divided
4 cloves garlic, minced
1/2 tsp Italian seasoning
1/4 tsp red pepper flakes (optional)
1/2 cup chicken broth
1/2 cup heavy cream
1/4 cup grated Parmesan cheese, plus more for serving
1 lb rotini pasta
1/4 cup chopped fresh parsley
Salt and pepper to taste

Directions:
1. Cook the rotini according to package directions until al dente. Drain and set aside.
2. Season the chicken cubes with salt, pepper, and Italian seasoning.
3. Heat olive oil and 2 tbsp butter in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
4. In the same skillet, melt the remaining 2 tbsp butter. Add the minced garlic and red pepper flakes (if using) and cook for about 30 seconds until fragrant, being careful not to burn the garlic.
5. Pour in the chicken broth and heavy cream. Bring to a simmer and cook for 2-3 minutes, allowing the sauce to slightly thicken.
6. Stir in the Parmesan cheese until melted and smooth. Season the sauce with salt and pepper to taste.
7. Add the cooked rotini pasta and chicken back to the skillet. Toss to coat everything evenly in the creamy garlic butter sauce.
8. Garnish with fresh parsley and additional Parmesan cheese before serving.
