Double Smash Cheeseburger with Caramelized Onions

Ingredients:

1 lb ground beef (80/20 blend)

Salt and freshly ground black pepper

4 slices American or cheddar cheese

1 large yellow onion, thinly sliced

1 tablespoon butter

1 tablespoon olive oil

4 burger buns (brioche or classic)

2 tablespoons mayo

1 tablespoon mustard

Pickles (optional)

Directions:

Heat a skillet over medium-low heat. Add butter and olive oil. Once melted, add sliced onions. Cook slowly, stirring occasionally, for 20–25 minutes until deep golden brown and caramelized. Set aside.

Divide ground beef into 8 loose balls (2 oz each). Keep them loosely packed.

Heat a cast iron skillet or griddle over high heat until smoking hot.

Place two beef balls onto the hot surface and immediately smash each with a spatula or burger press until very thin. Season generously with salt and pepper.

Let the patties cook undisturbed for 2–3 minutes until crispy edges form. Flip, add cheese to two of the patties, and cook 1 minute more. Stack cheese-covered patty with another to form double burgers.

Toast burger buns in the skillet until golden.

Spread mayo and mustard on the buns, layer with caramelized onions, pickles (if using), and the double smash patties. Serve immediately.
