Hey there, fellow food lovers! Today, I’m excited to share one of my all-time favorites: Garlic Chicken Lo Mein! 🍜✨ This dish is packed with flavor, loaded with veggies, and it's super easy to whip up for a cozy dinner or a quick meal on a busy night. Let’s get cooking!

Ingredients you'll need:
- 2 boneless, skinless chicken breasts, cubed
- 1 tablespoon garlic powder
- Salt and pepper to taste
- 1 tablespoon fish sauce
- 1 teaspoon fresh ginger, grated
- 10 garlic cloves, minced
- 2 teaspoons fresh ginger, grated (you can never have too much ginger!)
- 2 cups cabbage, shredded
- 2 cups broccoli florets
- 2 carrots, shredded
- 4 green onions, sliced
- 6 ounces mushrooms, sliced
- 2 celery stalks, sliced
- 8 ounces buckwheat lo mein noodles
- 1/4 cup soy sauce
- 1 tablespoon hoisin sauce
- 1 teaspoon black pepper
- 2 tablespoons Szechuan garlic butter (because we need that kick!)
- Cooking oil (like canola or vegetable oil)

Now, let’s get down to the fun part—cooking!

1. Start by getting your chicken ready. In a mixing bowl, combine the cubed chicken with the garlic powder, salt, pepper, fish sauce, and grated ginger. Give it a good mix to ensure all the chicken is well-coated and flavorful.

2. Next, it’s noodle time! Cook the lo mein noodles according to the package instructions, but remember to undercook them by 1–2 minutes. We want them firm enough to hold their shape later. Once done, drain and set them aside for later.

3. Grab a skillet or wok and heat up 1 tablespoon of cooking oil over medium-high heat. Toss in that seasoned chicken and let it cook until it's golden brown, which should take about 6–8 minutes. As you get close to the end, add in 1 tablespoon of Szechuan garlic butter and half of the minced garlic. Trust me, you’ll want to breathe in this delicious combo! Once it’s fragrant, remove the chicken from the pan and set it aside.

4. Don’t clean the pan just yet! Add another tablespoon of cooking oil if necessary, then throw in the remaining minced garlic and grated ginger for a quick sauté—just about 1 minute will do. Now for the colorful part! Add in the cabbage, broccoli, shredded carrots, sliced green onions, mushrooms, and celery. Stir-fry until those veggies are tender-crisp, which should take around 5–7 minutes.

5. It’s time to bring it all together! Return the cooked chicken to the pan with the vibrant veggies. Toss in the undercooked noodles, and then stir in the soy sauce, hoisin sauce, fish sauce, black pepper, and the rest of that delicious Szechuan garlic butter. Mix everything together over medium heat until the noodles are fully cooked and coated in that amazing sauce—about 2–3 minutes is all it takes.

6. And just like that, you’re ready to serve! Remove the pan from heat and dig in while it’s hot. This Garlic Chicken Lo Mein is perfect for sharing, but you might not want to! 🍽️❤️
