Deliciously Moist Banana Chickpea Squares for a Healthy Indulgence ππͺπ±
Ingredients:
- 1 can (15 ounces / 425g) chickpeas, rinsed and drained
- 2 ripe bananas, mashed
- Β½ cup (120 ml) maple syrup
- ΒΌ cup (60 ml) almond butter
- 1 teaspoon vanilla extract
- Β½ teaspoon baking soda
- ΒΌ teaspoon sea salt
- Β½ cup (70g) vegan chocolate chips (optional)
Directions:
1. Preheat oven to 350Β°F (175Β°C). Line an 8x8 inch square baking pan with parchment paper.
2. In a food processor, blend the chickpeas, mashed bananas, maple syrup, almond butter, and vanilla extract until smooth.
3. In a separate bowl, whisk together the baking soda and sea salt. Add this to the wet ingredients and mix well.
4. Stir in the vegan chocolate chips, if using.
5. Pour the batter into the prepared baking pan and spread evenly.
6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached.
7. Let the blondies cool completely in the pan before cutting into squares.
