ingredients:
- 1 cup cooked vegetables (broccoli, carrots, peas) (240 ml), finely chopped
- 1/2 cup chickpea flour (120 ml)
- 1 tablespoon nutritional yeast (15 ml)
- 1 teaspoon ground turmeric
- 1 teaspoon grated fresh ginger
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 2 tablespoons olive oil (30 ml)
directions:
1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. In a medium bowl, combine the finely chopped cooked vegetables, chickpea flour, nutritional yeast, ground turmeric, grated fresh ginger, and garlic powder.
3. Season with salt and pepper to taste. Mix everything together well until a cohesive dough forms. If the mixture is too dry, add a tiny bit of water (teaspoon by teaspoon) until it comes together.
4. Roll the dough into small bite-sized balls (about 1 inch in diameter) and place them on the prepared baking sheet.
5. Lightly brush the veggie bites with olive oil.
6. Bake for 20-25 minutes, or until they are golden brown and slightly firm to the touch.
7. Allow the veggie bites to cool slightly before serving. They can be enjoyed warm or at room temperature.
