Stir-Fry Ramen with Teriyaki Chicken 🍜
Ingredients:
1 lb boneless, skinless chicken breasts, cut into strips
2 packs ramen noodles (discard seasoning packets)
2 tbsp vegetable oil
2 cups mixed stir-fry vegetables (like bell peppers, broccoli, carrots)
2 cloves garlic, minced
½ cup teriyaki sauce (bottled or homemade)
2 green onions, sliced (optional for garnish)
Sesame seeds (optional for garnish)
Directions:
Cook the ramen noodles according to package directions. Drain and set aside.
In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat.
Add the chicken strips and cook for 6-8 minutes until browned and fully cooked. Remove from the skillet and set aside.
In the same skillet, add the remaining oil and the mixed vegetables. Stir-fry for 4-5 minutes until crisp-tender.
Add the garlic and cook for 1 more minute, stirring constantly.
Return the chicken to the skillet. Add the cooked ramen noodles and pour the teriyaki sauce over everything.
Toss well to coat all the ingredients in the sauce. Cook for 2-3 more minutes until everything is heated through.
Serve hot, garnished with green onions and sesame seeds if you like.
