Amish Apple Fritter Bread
Ingredients:
Bread:
1/3 cup brown sugar
1 teaspoon ground cinnamon
1/2 cup butter (1 stick), softened
2/3 cup granulated sugar
2 eggs
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 cup milk
Apple Filling:
2 cups apples, peeled, cored, and chopped
1 teaspoon ground cinnamon
1 tablespoon granulated sugar
Glaze:
1/2 cup powdered sugar
1 tablespoon milk
Instructions:
Preheat oven to 350°F. Grease an 8.5×4.5×2.5-inch loaf pan with non-stick cooking spray.
In a small bowl, whisk together brown sugar and cinnamon; set aside.
In a large bowl, use an electric mixer to cream butter and granulated sugar until light and fluffy. Beat in eggs and vanilla until just combined.
In a separate bowl, whisk together flour and baking powder. Gradually add flour mixture to the wet mixture, stirring until combined. Add milk and mix until smooth.
Pour half of the batter into the prepared loaf pan, spreading evenly.
In a small bowl, mix the apple filling ingredients. Spread half of the apple mixture over the batter. Add remaining batter, smoothing it over the apples. Top with the rest of the apple mixture, pressing the apples slightly into the batter.
Sprinkle brown sugar and cinnamon mixture evenly over the top of the bread.
Bake for 1 hour, or until a toothpick inserted into the center comes out clean. Cool in the pan for 30 minutes.
In a small bowl, whisk together glaze ingredients until smooth. Drizzle over the cooled bread.
Slice and serve.
