Cajun Salmon with Roasted Tomato Penne
Spicy Cajun Salmon Penne with Roasted Tomato Sauce
Ingredients:
12 oz (340 g) penne pasta
2 salmon fillets (about 6 oz / 170 g each), skin removed
2 tablespoons olive oil
2 teaspoons Cajun seasoning
1/2 teaspoon smoked paprika
1 pint cherry tomatoes, halved
3 cloves garlic, minced
1/2 teaspoon red pepper flakes (optional, for extra heat)
1/4 cup olive oil (for roasted tomato sauce)
1/2 cup grated Parmesan cheese
1/4 cup fresh basil, chopped
Salt and black pepper, to taste
Directions:
Preheat oven to 400°F (200°C). Spread cherry tomatoes on a baking sheet, drizzle with olive oil, sprinkle with salt, pepper, and garlic. Roast for 20–25 minutes until softened and caramelized.
Cook penne pasta according to package directions until al dente. Drain and set aside.
Season salmon fillets with Cajun seasoning, smoked paprika, salt, and pepper. Heat 2 tablespoons olive oil in a skillet over medium heat and sear salmon for 3–4 minutes per side until cooked through. Remove, flake into large pieces, and set aside.
In the same skillet, combine roasted tomatoes and red pepper flakes. Toss gently with the cooked penne pasta. Add Parmesan cheese and basil, mixing until coated.
Gently fold in the salmon chunks. Serve hot, garnished with extra Parmesan and basil.
