Fresh & Flavorful Shrimp & Egs

Ingredients:
Salad Base: 4 cups mixed greens (lettuce, spinach
arugula)
Toppings:
12 large shrimp (peeled, deveined, cooked)
2 hard-boiled eggs (sliced)
2 cup cherry tomatoes (halved)
/4 cup cucumber slices
14 cup shredded carrots
2 tbsp red onion (thinly sliced)
2 tbsp crumbled feta or goat cheese (optional)
Dressing:
3 tbsp olive oil
1 tbsp lemon juice
1 tsp Dijon mustard
1 garlic clove (minced)
Salt and pepper to taste
Instructions:
Arrange mixed greens on a large serving platter or
bowl.
Layer shrimp, egg slices, cherry tomatoes
cucumber, carrots, and red onion over the greens.
Whisk together olive oil, lemon juice, Dijon
mustard, garlic, salt, and pepper. Drizzle over the
salad.
Sprinkle with feta or goat cheese if desired. Serve
immediately.
