Vintage Whitby Lemon Buns (Citrus-Glazed Buns) ๐๐ฉ
These charming, old-fashioned Whitby lemon buns are a lovely treat with a soft, fluffy texture and a zesty citrus glaze that makes them utterly irresistible. A perfect blend of sweet and tart, these buns are ideal for afternoon tea or a light snack to brighten your day!
Ingredients:
๐ Lemons: 2 (zest and juice)
๐ง Unsalted butter: 50g, softened
๐ Caster sugar: 100g
๐ง Plain flour: 250g
๐ง Baking powder: 1 tsp
๐งด Active dry yeast: 7g (1 sachet)
๐ฅ Whole milk: 150ml, lukewarm
๐ง Salt: 1/4 tsp
๐ง Icing sugar: 100g (for glaze)
๐ง Water: 2 tbsp (for glaze)
Method:
๐งด In a small bowl, dissolve the yeast and 1 teaspoon of sugar in the warm milk. Set aside for 5 minutes, until frothy.
๐ง In a large mixing bowl, cream together the softened butter and remaining sugar. Add the zest of one lemon and mix well.
๐ Add the yeast mixture and the juice of one lemon to the butter and sugar. Stir in the flour, baking powder, and salt until a soft dough forms.
๐ฅ Turn the dough out onto a floured surface and knead for 5-7 minutes, until the dough is smooth and elastic.
๐ฒ Place the dough in a lightly oiled bowl, cover with a tea towel, and let rise for 1 hour, or until doubled in size.
๐ช Once the dough has risen, punch it down and divide it into 10-12 small buns. Place the buns on a greased baking tray, leaving space between them. Cover and allow to rise for another 30 minutes.
๐ฅ Preheat your oven to 180ยฐC (fan). Bake the buns in the oven for 15-20 minutes, or until golden brown.
๐ While the buns are baking, make the glaze by mixing the icing sugar with the juice of the second lemon and the water. Stir until smooth.
๐ฝ Once the buns are baked and slightly cooled, drizzle the citrus glaze over the buns for that extra burst of lemony sweetness.
