Lobster and Corn Chowder
Servings: 4
Prep Time: 20 minutes
Cook Time: 30 minutes
Total Time: 50 minutes

Ingredients
For the Chowder:

2 tablespoons butter
1 medium onion, diced
2 cloves garlic, minced
2 celery stalks, diced
1 medium carrot, diced
2 cups potatoes, peeled and diced
3 cups corn kernels (fresh, frozen, or canned)
4 cups seafood or chicken broth
1 cup heavy cream
1 cup milk
1 bay leaf
1 teaspoon dried thyme
1/2 teaspoon smoked paprika
Salt and black pepper, to taste
2 cups cooked lobster meat, chopped
2 tablespoons fresh parsley, chopped (for garnish)
For Garnish:

Crusty bread or oyster crackers (optional)
Instructions
Prepare the Chowder:

Sauté Vegetables: In a large pot or Dutch oven, melt the butter over medium heat. Add the diced onion, garlic, celery, and carrot. Cook for about 5 minutes, or until the vegetables are softened.
Add Potatoes and Corn: Stir in the diced potatoes and corn kernels, cooking for an additional 2-3 minutes.
Add Liquids and Seasonings: Pour in the seafood or chicken broth, heavy cream, and milk. Add the bay leaf, dried thyme, and smoked paprika. Stir well and bring to a boil.
Simmer: Reduce the heat to low and let the chowder simmer for about 15 minutes, or until the potatoes are tender and the chowder has thickened slightly. Stir occasionally.
Add Lobster: Stir in the chopped lobster meat and cook for an additional 3-4 minutes, or until the lobster is heated through.
Serve:

Garnish: Remove the bay leaf. Ladle the chowder into bowls and garnish with chopped fresh parsley.
Accompaniments: Serve with crusty bread or oyster crackers, if desired.
Tips:
Lobster Meat: For the best flavor, use fresh or high-quality frozen lobster meat. If using lobster tails, boil them until cooked and then remove the meat.
Thicker Chowder: If you prefer a thicker chowder, you can mash some of the potatoes in the pot with a potato masher or use an immersion blender to partially blend the chowder.
Corn: If using canned corn, be sure to drain it well before adding it to the chowder.
Enjoy your Lobster and Corn Chowder! 🦞🥣🌽
