Ingredients
For the Cake:
2 cups (250g) all-purpose flour
¾ cup (75g) unsweetened cocoa powder
1½ teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
1¾ cups (350g) granulated sugar
¾ cup (180ml) vegetable oil
2 large eggs
1 teaspoon vanilla extract
1 cup (240ml) Baileys Irish Cream
½ cup (120ml) brewed coffee (cooled)
For the Frosting:
1 cup (230g) unsalted butter, softened
3½ cups (440g) powdered sugar, sifted
½ cup (120ml) Baileys Irish Cream
¼ cup (30g) unsweetened cocoa powder (optional for chocolate frosting)

Chocolate shavings or curls
Coffee beans
Drizzle of melted chocolate
Instructions
1. Prepare the Cake:
Preheat your oven to 350°F (175°C). Grease and line two 8-inch (20cm) round cake pans with parchment paper.
In a large bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
In another bowl, whisk the sugar, vegetable oil, eggs, and vanilla extract until smooth.
Gradually mix in the Baileys Irish Cream and brewed coffee.
Slowly combine the wet and dry ingredients, stirring until the batter is smooth. Avoid overmixing.
Divide the batter evenly between the prepared pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
Let the cakes cool completely in the pans before transferring them to a wire rack.
2. Make the Frosting:
Beat the softened butter in a large bowl until creamy.
Gradually add the powdered sugar and cocoa powder (if using), alternating with the Baileys Irish Cream. Beat until smooth and fluffy. Adjust the consistency with more powdered sugar or Baileys if needed.
3. Assemble the Cake:
Place one cake layer on a serving plate or cake stand. Spread a generous layer of frosting on top.
Add the second cake layer and frost the top and sides of the cake evenly.
4. Decorate:
Sprinkle chocolate shavings or curls over the top.
Add coffee beans or drizzle melted chocolate for extra flair.
5. Chill and Serve:
Refrigerate the cake for at least 1 hour before serving to let the flavors meld together.

If you prefer a non-alcoholic version, replace Baileys with a mix of heavy cream and vanilla extract.
