Ingredients:
β’ For the Garlic-Herb Grilled Shrimp:
β’ 1 lb shrimp, peeled and deveined
β’ 2 tbsp olive oil
β’ 1 tbsp lemon zest
β’ 1 tbsp lemon juice
β’ 2 cloves garlic, minced
β’ 1 tsp dried oregano
β’ Salt and pepper, to taste
β’ For the Couscous Salad:
β’ 1 cup pearl couscous (or regular couscous)
β’ 1/2 cucumber, diced
β’ 1/4 cup Kalamata olives, pitted and chopped
β’ 1/4 cup crumbled goat cheese
β’ Fresh dill, chopped (for garnish)
β’ For the Tzatziki Dressing:
β’ 1/2 cup plain Greek yogurt
β’ 2 tbsp cucumber, grated and drained
β’ 1 tbsp olive oil
β’ 1 tbsp lemon juice
β’ 1 tbsp fresh dill, chopped
β’ Salt and pepper, to taste
Instructions:
1. Prepare the Garlic-Herb Grilled Shrimp:
β’ In a bowl, combine olive oil, lemon zest, lemon juice, minced garlic, oregano, salt, and pepper. Toss the shrimp in the marinade and let it sit for at least 15-20 minutes.
β’ Preheat your grill or grill pan to medium-high heat. Grill the shrimp for 2-3 minutes per side until they turn pink and are cooked through. Remove from the grill and set aside.
2. Cook the Couscous:
β’ Bring a medium pot of salted water to a boil. Add the couscous and cook according to the package instructions (usually 8-10 minutes). Drain and set aside to cool.
3. Make the Tzatziki Dressing:
β’ In a small bowl, combine Greek yogurt, grated cucumber, olive oil, lemon juice, fresh dill, salt, and pepper. Stir until smooth and creamy.
4. Assemble the Salad:
β’ In a large bowl, combine the cooked couscous, diced cucumber, Kalamata olives, and crumbled goat cheese. Toss gently to combine.
β’ Add the grilled shrimp on top and drizzle with the tzatziki dressing. Toss everything together to coat.
5. Serve:
β’ Garnish with fresh dill for an added burst of flavor and color. Serve immediately or refrigerate for 30 minutes for a chilled version.
