Key Lime Pound Cake
Ingredients
Cake:
3 cups all-purpose flour
2 cups granulated sugar
1 cup unsalted butter, softened
4 large eggs
1 cup buttermilk
Zest of 3 key limes
1/4 cup key lime juice
1 tsp vanilla extract
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
Lime Glaze:
1 cup powdered sugar
2-3 tbsp key lime juice
Zest of 1 key lime
Directions
Preheat your oven to 350°F (175°C). Prepare a bundt or loaf pan by greasing and flouring it thoroughly.
In a large mixing bowl, cream the softened butter with granulated sugar until the mixture is light and fluffy. Add the eggs one at a time, ensuring to mix well after each addition. Incorporate the key lime zest, key lime juice, and vanilla extract into the mixture.
In another bowl, combine the flour, baking powder, baking soda, and salt. Gradually mix the dry ingredients into the wet mixture, alternating with the buttermilk, until the batter is smooth and well blended.
Pour the batter into the prepared pan and smooth the top. Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake to cool in the pan for 15 minutes before transferring it to a wire rack to cool completely.
For the lime glaze, whisk together the powdered sugar and key lime juice in a small bowl until smooth. Stir in the lime zest for added flavor.
Once the cake has cooled, drizzle the lime glaze over it, letting it flow down the sides. Allow the glaze to set before slicing and serving.
