ONE-POT CHEESY BEEF PASTA WITH A CREAMY TWIST
Ingredients:
1 lb ground beef
12 oz rotini or penne pasta
1 tablespoon olive oil
1 tablespoon Cajun seasoning
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon smoked paprika
1 small yellow onion, diced
2 cloves garlic, minced
2 cups beef broth
1 cup milk
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
4 oz cream cheese
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)
Directions:
In a large deep skillet or Dutch oven, heat olive oil over medium heat. Add diced onion and cook until softened. Add garlic and sauté for another minute.
Stir in ground beef, breaking it up as it cooks. Season with Cajun seasoning, garlic powder, onion powder, and smoked paprika. Cook until fully browned, about 6–8 minutes.
Add dry pasta, beef broth, and milk. Bring to a boil, then reduce to a simmer. Cook uncovered for 10–12 minutes, stirring occasionally, until pasta is tender.
Stir in cream cheese until melted. Add shredded cheddar and Parmesan, mixing until smooth and creamy.
Season with salt and pepper to taste. Let rest a few minutes to thicken.
Serve hot, garnished with chopped parsley.
