Grilled Chicken with Creamy Basil Tomato Pasta
Char-Grilled Chicken Breast over Creamy Basil-Infused Tomato Penne
Ingredients:
2 boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and black pepper to taste
1/2 teaspoon paprika
8 oz penne pasta
1 tablespoon olive oil (for sauce)
3 cloves garlic, minced
2 cups cherry tomatoes, halved
1/2 teaspoon red pepper flakes (optional)
1/2 cup low-fat cream or coconut cream
1/4 cup grated Parmesan or dairy-free alternative
1/3 cup fresh basil, chopped
Juice of half a lemon
Directions:
Preheat grill or grill pan over medium heat.
Rub chicken breasts with olive oil, garlic powder, onion powder, paprika, salt, and pepper.
Grill chicken for 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (74°C). Remove and let rest.
Cook penne pasta according to package instructions. Drain and set aside.
In a large skillet, heat 1 tbsp olive oil over medium heat. Add minced garlic and sauté for 30 seconds.
Add cherry tomatoes and red pepper flakes. Cook for 5 minutes, stirring occasionally, until tomatoes begin to soften.
Reduce heat to low and stir in the cream. Simmer gently for 3 minutes.
Add Parmesan and chopped basil, then stir until cheese melts and sauce is creamy.
Toss the cooked pasta into the sauce, stirring well to coat.
Slice grilled chicken and place over the creamy basil tomato pasta. Drizzle with lemon juice before serving.
