Healthy Pecan & Chia Seed Granola Clusters: Vegan & Gluten-Free ✨🥣😋

ingredients:
2 cups (180g) rolled oats (use certified GF if needed)
1 cup (110g) raw pecans, roughly chopped
½ cup (80g) chia seeds
½ cup (70g) pumpkin seeds or sunflower seeds
½ tsp ground cinnamon
¼ tsp salt
½ cup (120ml) maple syrup
¼ cup (60ml) melted coconut oil
1 tsp vanilla extract

directions:
1. Preheat oven to 300°F (150°C). Line a large baking sheet with parchment paper.
2. In a large bowl, combine the rolled oats, chopped pecans, chia seeds, pumpkin/sunflower seeds, cinnamon, and salt. Stir well.
3. In a separate small bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract.
4. Pour the wet ingredients over the dry oat mixture. Stir thoroughly until all ingredients are evenly coated and sticky.
5. Spread the mixture onto the prepared baking sheet in an even layer. Press down firmly with a spatula to help create clusters.
6. Bake for 20 minutes. Remove from the oven. Do not stir if you want large clusters.
7. Return to the oven and bake for another 15-20 minutes, or until the granola is golden brown around the edges and feels mostly dry. Watch pecans carefully as they can burn.
8. Let the granola cool completely on the baking sheet without disturbing it. This is crucial for forming large, crunchy clusters.
9. Once cool, break the granola into clusters of your desired size.
10. Store in an airtight container at room temperature for up to 2 weeks.
