No-Bake Chocolate Mint Slice is a layered dessert with a crunchy chocolate cookie base, a creamy mint filling, and a rich chocolate ganache topping.

Ingredients:
(Makes about 16 squares)

For the Chocolate Cookie Base:
- 250g (about 2 cups) chocolate cookies or chocolate graham crackers, crushed
- 100g (1/2 cup) unsalted butter, melted

For the Mint Cream Layer:
- 2 cups powdered sugar
- 2 tbsp unsalted butter, softened
- 2 tbsp milk
- 1 tsp peppermint extract
- Green food coloring (optional)

For the Chocolate Ganache Topping:
- 200g (7 oz) dark or milk chocolate, chopped
- 1/2 cup heavy cream

Directions:

Step 1: Make the Base
1. Line an 8x8 or 9x9 inch square pan with parchment paper.
2. Combine crushed chocolate cookies with melted butter.
3. Press the mixture firmly into the base of the pan. Chill in the fridge while making the filling.

Step 2: Make the Mint Cream Layer
1. In a bowl, beat together powdered sugar, butter, milk, and peppermint extract until smooth.
2. Add a few drops of green food coloring if desired.
3. Spread the mint filling evenly over the chilled base. Chill again for 30 minutes.

Step 3: Make the Ganache
1. Heat heavy cream in a small saucepan until just simmering.
2. Pour over chopped chocolate and let sit for 2 minutes. Stir until smooth and glossy.
3. Pour the ganache over the mint layer and spread evenly.

Step 4: Chill & Slice
1. Refrigerate the slice for at least 2 hours or until fully set.
2. Slice into squares using a warm sharp knife for clean cuts.
