CARROT CAKE COOKIE SANDWICHES
Cookies:
1 ½ cups all-purpose flour
1 tsp cinnamon
¼ tsp nutmeg
½ tsp baking soda
¼ tsp salt
½ cup unsalted butter, softened
½ cup brown sugar
¼ cup granulated sugar
1 large egg
1 tsp vanilla extract
1 cup finely grated carrots
½ cup chopped walnuts or pecans (optional)
½ cup rolled oats
Cream Cheese Filling:
6 oz cream cheese, softened
3 tbsp butter, softened
1 cup powdered sugar
½ tsp vanilla extract

Instructions:
1. Preheat oven to 350°F (175°C). Line baking sheet with parchment.
2. Whisk flour, cinnamon, nutmeg, baking soda, and salt.
3. Cream butter and sugars. Add egg and vanilla, then mix in dry ingredients.
4. Fold in carrots, oats, and nuts (if using).
5. Scoop dough and flatten slightly. Bake 10–12 mins. Cool completely.
6. Beat cream cheese filling ingredients until smooth.
7. Pipe or spoon onto half the cookies and top with the other halves.
