A decadent dessert combining creamy chocolate cheesecake with a luscious cherry topping – pure indulgence!

Ingredients:
For the Chocolate Cheesecake:
2 cups chocolate cookie crumbs

1/2 cup unsalted butter, melted

16 oz cream cheese, softened

1 cup sugar

1 cup sour cream

3 large eggs

1 cup melted dark chocolate

1 tsp vanilla extract

For the Cherry Filling:
2 cups pitted cherries (fresh or canned)

1/2 cup sugar

1 tbsp cornstarch

1/2 cup water

1 tbsp lemon juice

For the Topping:
Whipped cream

Chocolate shavings

Extra cherries

Directions:
Prepare the Crust:

Preheat your oven to 325°F (160°C).

In a bowl, combine the chocolate cookie crumbs and melted butter, mixing until well coated. Press the mixture into the bottom of a springform pan.

Bake for 10 minutes, then set aside to cool completely.

Make the Cheesecake Batter:

Beat the softened cream cheese in a large bowl until smooth. Add the sugar and mix until well combined.

Stir in the sour cream, then add the eggs one at a time, mixing well after each addition.

Add the melted dark chocolate and vanilla extract, mixing until smooth and creamy.

Bake the Cheesecake:

Pour the cheesecake batter over the cooled crust.

Bake for 50-60 minutes, or until the center is just set. Turn off the oven and leave the cheesecake inside for 1 hour to cool slowly and avoid cracking.

After cooling, refrigerate the cheesecake for at least 4 hours or overnight for best results.

Make the Cherry Filling:

In a saucepan, combine cherries, sugar, cornstarch, water, and lemon juice.

Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon. Allow the filling to cool completely.

Assemble and Serve:

Once the cheesecake is chilled, top it with the cooled cherry filling.

Garnish with whipped cream, chocolate shavings, and additional cherries for an extra touch of elegance.
