MOLASSES CAKE
1/2 cup shortening
1/2 cup brown sugar
1 egg, beaten
2 cups flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
dash of nutmeg
1/2 teaspoon ground ginger
1/2 cup molasses
1/2 cup milk
Beat shortening until light, gradually adding sugar and beaten egg, beating continually. In a separate bowl, whisk together flour, baking powder and baking soda, salt and cinnamon, nutmeg and ginger. To the first bowl, add molasses, part of the flour mixture and the milk, beating between each addition. Add remaining flour mixture, stir well but do not beat. Bake in a greased 9" square pan in a preheated 325°F. for about 40 minutes or until cake tests done.
Serve while still warm from oven with butter, whipped cream, or vanilla ice cream. Or frost with vanilla glaze
This cake can also be baked in muffin tins at 350°F for about 20 minutes
