Pecan Pie Cobbler
Ingredients:
6 tablespoons unsalted butter, sliced
1 ¼ cups all-purpose flour
¾ cup granulated sugar
2 teaspoons baking powder
½ teaspoon salt
⅔ cup milk
1 teaspoon vanilla extract
2 cups chopped pecans
1 cup packed brown sugar
1 ½ cups boiling water
Directions:
Preheat the oven to 350°F (175°C). Place butter slices in a 9x13-inch baking dish and allow them to melt while the oven preheats.
In a bowl, whisk together the flour, granulated sugar, baking powder, and salt.
Stir in the milk and vanilla extract until a smooth batter forms.
Remove the baking dish from the oven and pour the batter over the melted butter. Do not stir.
Evenly distribute the chopped pecans over the batter.
In a separate bowl, dissolve the brown sugar in boiling water.
Gently pour the brown sugar mixture over the pecans and batter without mixing.
Bake for 35-40 minutes until the top is golden brown and the cobbler is set.
Let it cool slightly before serving
