Delicious Rhubarb Fluff
Ingredients:
3 cups chopped fresh rhubarb
¾ cup granulated sugar
½ cup water
1 (3 oz) package strawberry or raspberry gelatin
2 cups mini marshmallows
1 cup crushed pineapple (drained)
1 cup whipped topping (or stabilized whipped cream)
Directions:
In a saucepan, combine rhubarb, sugar, and water. Cook over medium heat for 10–12 minutes until rhubarb is tender and mixture is syrupy.
Remove from heat and stir in gelatin until dissolved. Cool to room temperature.
Stir in marshmallows and crushed pineapple. Chill mixture until it begins to thicken (about 1 hour).
Fold in whipped topping gently until well combined.
Transfer to a serving bowl and chill for at least 2 hours before serving.
