Indulge in these delectable Strawberry Swirl Cheesecake Cookie Cups that perfectly combine a crunchy crust with creamy cheesecake and a delightful strawberry twist! 🍓🥳

Ingredients:
1 cup graham cracker crumbs
2 tablespoons granulated sugar
4 tablespoons unsalted butter, melted
8 oz cream cheese, softened
1/4 cup granulated sugar (for filling)
1 large egg
1/2 teaspoon vanilla extract
1/4 cup sour cream
1/4 cup strawberry jam or preserves (smooth or slightly chunky)
Optional: fresh strawberry slices for garnish

Instructions:
1. Preheat your oven to 325°F (160°C). Line a muffin pan with 9 paper cupcake liners.
2. In a small bowl, combine the graham cracker crumbs, 2 tablespoons of sugar, and melted butter. Mix well. Spoon approximately 1 tablespoon of this mixture into each liner and press down firmly to form the crust.
3. In a medium bowl, beat the softened cream cheese until smooth. Gradually add in 1/4 cup of sugar and mix until fully combined. Then, incorporate the egg, vanilla extract, and sour cream, mixing until the batter is creamy and smooth.
4. Evenly distribute the cheesecake mixture over the crusts in the cupcake liners, filling each one nearly to the top.
5. Drop small amounts of strawberry jam on the surface of each cup. Using a toothpick or skewer, gently swirl the jam into the cheesecake batter to create a marbled effect.
6. Bake for 18–22 minutes, or until the centers are set but still slightly jiggly. Once done, remove from the oven and let cool in the pan for 15 minutes. Then, transfer to the refrigerator to chill for at least 2 hours, or until completely set.
7. If desired, top with fresh strawberry slices before serving. Keep refrigerated until you're ready to enjoy!

Treat yourself to these heavenly bites! 😊🍰
