SMOKED SALMON SALAD ✨️🥗
This quick and easy Smoked Salmon Salad comes together in 30 minutes. It's not only delicious, but filling and healthy too!
RECIPE - Serves 2
Ingredients 🛒
200g/7oz Smoked Salmon
Garlic Herbed Feta Cheese
Cherry Tomatoes, halved
Cucumber slices, halved
Kalamata Olives
Sweetcorn
1 Lettuce, roughly chopped
2 Hard Boiled Eggs, halved
Poppy Seeds
Sesame Seeds
Dressing:
3 Tbsp White Wine Vinegar
2 Tsp Whole Grain Mustard
1 Tbsp Honey
2 Tbsp Extra Virgin Olive Oil
Salt & Pepper
Method:
Whisk dressing ingredients together. Cover and refrigerate until ready to use.
On a serving plate, lay a bed of chopped lettuce.
Arrange rolls of salmon, sliced cucumber, halved cherry tomatoes, cubes of feta cheese, olives and 2 halved boiled eggs on each side.
Sprinkle top with poppy and sesame seeds and drizzle over dressing.
