4 large eggs
1 tbsp butter
1/4 tsp salt

1/4 tsp black pepper
For the Guacamole:
2 ripe avocados
1/4 cup red onion, finely diced
1 small tomato, diced
1 tbsp fresh cilantro, chopped
1 tbsp lime juice
1/4 tsp salt
For Serving:
1/2 cup cherry tomatoes, halved
1 tbsp fresh cilantro, chopped (for garnish)
Instructions
1. Prepare the Ribeye Steak:Remove the steaks from the refrigerator 20-30 minutes before cooking to bring them to room temperature.
Rub the steaks with olive oil, then season both sides with salt, black pepper, and garlic powder.
Heat a grill pan or cast-iron skillet over high heat. Sear the steaks for 4-5 minutes per side for medium-rare (135°F/57°C internal temperature), or adjust to your preferred doneness. Let the steaks rest for 5 minutes before serving.

2. Cook the Sunny-Side-Up Eggs:In a non-stick skillet, melt the butter over medium-low heat.
Crack the eggs into the skillet, keeping the yolks intact. Season with salt and black pepper.
Cook for 2-3 minutes until the whites are set but the yolks are still runny. Carefully transfer to a plate.

3. Make the Guacamole:In a medium bowl, mash the avocados with a fork until slightly chunky.
Stir in the red onion, diced tomato, cilantro, lime juice, and salt. Mix well and set aside.

4. Assemble and Serve:Place one grilled ribeye steak on each plate.
Add two sunny-side-up eggs next to each steak.
Spoon a generous portion of guacamole onto each plate, and scatter cherry tomatoes around it.
Garnish the guacamole with chopped cilantro.
Serve immediately on a wooden board or plate for a rustic presentation.

NotesFor a spicier guacamole, add a finely diced jalapeño or a pinch of red pepper flakes.
If you prefer a different steak cut, a New York strip or sirloin works well too.
