Polpo alla Luciana (Neapolitan Octopus Stew) 🇮🇹🐙
Ingredients:
• 500g octopus, cleaned
• 2 tbsp olive oil
• 2 cloves garlic, minced
• 250g canned tomatoes, crushed
• 50g black and green olives
• 1 tbsp capers
• 1/2 cup white wine
• Fresh parsley, chopped
• Salt and black pepper to taste
Instructions:
1. Heat olive oil in a pan and sauté garlic until fragrant.
2. Add octopus and sear for a few minutes.
3. Pour in white wine and let it reduce.
4. Add tomatoes, olives, and capers. Simmer for 1 hour until tender.
5. Garnish with fresh parsley and serve with crusty bread.
