Ingredients:
2 pounds fresh green beans, trimmed
4 cups water
3 cups white vinegar
2 tablespoons salt
4 cloves garlic, peeled and sliced
4 teaspoons dill seeds
2 teaspoons red pepper flakes
4 fresh dill sprigs
Directions:
In a large pot, bring water, vinegar, and salt to a boil.
Place trimmed green beans into sterilized canning jars.
To each jar, add 1 clove of sliced garlic, 1 teaspoon of dill seeds, 1/2 teaspoon of red pepper flakes, and a sprig of fresh dill.
Pour the boiling vinegar mixture over the green beans, filling the jars to within 1/2 inch of the top.
Seal the jars and process in a boiling water bath for 10 minutes.
Let the jars cool and store in a cool, dark place for at least 2 weeks before eating for optimal flavor development.
