🍎 Apple Fritter Bites 🍯
Ingredients
For the fritters:
1½ cups all-purpose flour
2 tablespoons granulated sugar
1½ teaspoons baking powder
½ teaspoon ground cinnamon
¼ teaspoon fine sea salt
½ cup whole milk (or buttermilk for extra tenderness)
1 large egg
1 teaspoon vanilla extract
1½ cups finely diced apples (about 1 medium apple; peeled and cored—Granny Smith or Honeycrisp recommended)
Vegetable or canola oil, for frying (about 1–2 cups)
For the glaze:
½ cup powdered sugar
1–2 tablespoons milk
¼ teaspoon ground cinnamon
Pinch of salt
Instructions
Prep apples: Pat diced apples very dry with a paper towel to prevent excess moisture in the batter.
Make batter: In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt. In a separate bowl, beat milk, egg, and vanilla. Pour wet ingredients into dry and stir just until combined—do not overmix. Fold in apples gently.
Heat oil: In a deep skillet or Dutch oven, heat 1½ inches of oil to 350°F (175°C). Use a candy thermometer for accuracy, or test with a small drop of batter—it should sizzle and rise immediately.
Fry fritters: Using a tablespoon or small cookie scoop, drop rounded portions of batter into the hot oil (about 4–5 at a time, don’t overcrowd). Fry 2–3 minutes per side, until golden brown and cooked through. Transfer to a wire rack set over paper towels to drain.
Make glaze: Whisk powdered sugar, milk, cinnamon, and salt until smooth. Adjust consistency with more milk (for drizzling) or sugar (for thickness).
Glaze & serve: While fritters are still warm, dip tops into glaze or drizzle generously. Let set 2–3 minutes before serving. Best enjoyed fresh!
