Dr Pepper Pulled Pork
Ingredients:
⦁ 3-4 lb pork shoulder
⦁ 1 can (12 oz) Dr Pepper (regular, not diet)
⦁ 1 medium onion, sliced
⦁ 2 tsp paprika
⦁ 2 tsp salt
⦁ 1 tsp garlic powder
⦁ 1 tsp black pepper
For the BBQ Sauce:
⦁ 1 can (12 oz) Dr Pepper
⦁ 1 cup ketchup
⦁ 1/4 cup dark brown sugar
⦁ 1/4 cup apple cider vinegar
⦁ 2 tbsp Worcestershire sauce
⦁ 2 tbsp tomato paste
⦁ 2 tsp smoked paprika
⦁ 1 tsp mustard powder
⦁ 1/2 tsp onion powder
⦁ 1/2 tsp garlic powder
⦁ 1/2 tsp salt
⦁ 1/2 tsp black pepper
⦁ Hot sauce to taste (optional)
Instructions:
1. Rub the pork shoulder all over with paprika, salt, garlic powder, and pepper.
2. Place onion slices in slow cooker and pour half the can of Dr Pepper over. Add pork on top, then pour the rest of the Dr Pepper over the pork. Cook on low for 10 hours.
3. While pork cooks, combine all BBQ sauce ingredients in a pot. Bring to a simmer and stir often until thickened (20-30 mins).
4. Remove pork, shred with forks, add onions and some cooking liquid back if you like for more flavor.
5. Toss shredded pork with BBQ sauce and serve on buns, in tacos, or over mac & cheese.
