Strawberry Layer Cake with Strawberry Icing
Ingredients:
For the strawberry cake:
2 1/2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup unsalted butter, softened
2 cups granulated sugar
4 large eggs
1 teaspoon vanilla extract
1 cup fresh strawberries (pureed) or strawberry puree (can use frozen strawberries, thawed and pureed)
1/2 cup buttermilk (or substitute with regular milk)
1/4 cup sour cream (or plain yogurt)
For the strawberry frosting:
1 cup fresh strawberries (pureed) or strawberry puree
1 cup unsalted butter, softened
4 cups powdered sugar (more if needed)
1 teaspoon vanilla extract
Pinch of salt
Instructions:
1. Preheat the oven:
Preheat your oven to 350°F (175°C).
Grease and flour two 9-inch round cake pans, or line them with parchment paper.
2. Make the cake batter:
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy (about 2-3 minutes).
Add the eggs one at a time, beating well after each addition.
Stir in the vanilla extract.
Mix in the pureed strawberries and sour cream.
Gradually add the dry ingredients, alternating with the buttermilk, starting and ending with the dry ingredients. Mix until just combined. Be careful not to overmix.
3. Bake the cakes:
Divide the batter evenly between the two prepared cake pans.
Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
4. Make the strawberry frosting:
Puree the fresh strawberries (or use pre-made strawberry puree).
In a large bowl, beat the softened butter with the strawberry puree until smooth.
Gradually add the powdered sugar, one cup at a time, beating well after each addition. Continue until the frosting is smooth and fluffy.
Stir in the vanilla extract and a pinch of salt. If the frosting is too soft, you can add more powdered sugar to thicken it to your desired consistency.
5. Assemble the cake:
Once the cakes are completely cooled, place one layer of the cake on a serving plate or cake stand.
Spread a layer of the strawberry frosting on top of the first cake layer.
Place the second cake layer on top and frost the entire cake with the strawberry frosting.
Decorate with fresh strawberries, if desired.
6. Serve and enjoy:
