🐟🇫🇷 Terrine de Poisson
A light and elegant French fish terrine made with tender white fish, cream, and herbs. Perfect as an appetizer or a refined main dish 🍋✨.
Ingredients:
• 500 g white fish fillets (cod, sole, or similar)
• 200 ml heavy cream
• 2 eggs
• 1 shallot, finely chopped
• 1 carrot, diced
• 1 zucchini, diced
• 2 tbsp fresh parsley, chopped
• Salt & pepper
• Butter (for greasing the mold)
Instructions:
1️⃣ Preheat oven to 180°C (350°F). Grease a terrine mold with butter.
2️⃣ Lightly sauté carrots and zucchini until tender.
3️⃣ Blend fish fillets, cream, eggs, shallot, salt, and pepper into a smooth paste.
4️⃣ Fold in sautéed vegetables and parsley.
5️⃣ Pour mixture into mold, cover with foil, and bake in a water bath for 40–45 minutes.
6️⃣ Cool, slice, and serve with lemon wedges and toast points 🍋🥖.
